umami, the fifth taste

The meaning of the Japanese word is difficult to convey, ’savory’ being one, ‘meaty’ another. It is enhanced by salt, and found in anchovies, mushrooms, tomatoes, parmesan and roquefort cheeses, grapes, meat, ketchup, soy sauce, and walnuts.

No wonder we like pizza so much.
